I’ve written about my love for Reading Terminal before. I was there this weekend and was overcome with the fall vegetable selections! I adore roasted beets and butternut squash. Vegetables scare people. I can’t figure out why. Prepared correctly they are freaking delicious!
Let’s go through the arsenal I purchased this weekend. Check out the pic:
Starting from left we have a yellow and red onion.
Scallions
Cucumbers
Spaghetti Squash
Apples
Lemons
Beets
White radishes (Sticking out at the bottom)
Thai peppers
Zucchini
Celery
Kale
Red Peppers
Lemon Grass
Spinach
Grand total: $18.00
So far I have made Spicy Spaghetti squash with red peppers and spinach, Radish Salad, Apple and Beet Salad with beet leaves, cucumber water, and have been snacking like crazy on the red peppers.
Tomorrow I going to go for a Coconut-Curry Chicken soup and get my lemongrass on.
